Friday nights are known for pizza in my household, and as I love to say, "A little pizza ain't never hurt nobody." Anyway, now that I have stopped the mid-life crisis snacking foolishness I have been indulging in over the last two years and have decided to lose 10 pounds, I also decided to lay off the pizza for the next few Fridays at least. As a result, yesterday instead of pizza, I ate a bowl of leftover salad with chicken tenders from my favorite local sports bar/restaurant. Anyway, it was absolutely delicious! Here's a close-up...
My favorite salad + three boneless chicken tenders (from a kid's meal to-go order).
I cut the tenders into bite-sized pieces and poured a little sauce from the restaurant on them and the salad. You can put the chicken in the salad after it is piping hot, but I just eat a bite of each together.
This meal is a lot lighter and a lot less carby, and instead of a little broccoli, spinach and green peppers thrown on a pizza for effect, I got a nutrient-dense, antioxidant-filled bowl of cancer-fighters! You can make it as large as it needs to be by adding more greens to it (e.g., spinach, kale, etc.), which is what I do when both sons are home. With those tenders and that sauce, they turn into salad-eating machines as long as there are not too many cucumbers in it! Hope you guys like it! Enjoy!
